Honey is a sweet liquid (mainly composed of sugars) produced by bees called honey bees using nectar form flowers.The nectar is then processed by the process called regurgitation and evaporation to form honey.The properties of honey depends on the type of bees and nectar/flower from which nectar is sucked but the benefits and composition nearly remains the same.In ancient times honey was used as a medicine to cure wounds and other diseases.At that time only a few benefits of honey was known to people and they used to use it as a medicine but now a days many benefits of honey are known but many people are not aware from it. Mainly honey is composed of different types of sugars which are mostly monosaccharides and disasccharides.Very few amount of other substances like water etc are also present.Here is the detailed composition of honey:

As you can see almost 80% of honey is composed of sugars which are mono and disaccharides and due to these sugars honey taste sweet in nature.
